Pet Travel Question: A Caribbean Adventure

We're planning to move aboard a sailboat by the end of the year. We're planning on leaving from Florida and making our way down the Caribbean archipelago and then up the Central American coast settling in Panama or Guatemala.
We want to stop in as many countries as we can with our dog, but I know the rules on paper and in practice vary through the many countries. Can you help us navigate this trip?
